February is a month of many different holidays and traditions celebrated around the world.  Paul and I don't personally take part in a majority of them but we always watch Wiarton Willie come out of his hole to see if he has seen his shadow, every day is Family Day to us and we never pass up Margarita Day.  Valentine's Day is also a big day as we choose to share the love but not with cards and flowers, but through food. In the realm of culinary delights, there's a mystical ingredient that has been captivating taste buds and gaining popularity - black garlic. This uniquely transformed garlic offers a rich, nuanced flavour profile and a plethora of culinary possibilities. Black garlic isn't a different variety of garlic but rather a result of a slow and low-temperature fermentation process. Bulbs of garlic are aged under controlled conditions for several weeks, causing the cloves to transform in both colour and taste. Recipe:

BLACK GARLIC BUTTER

• 500g or 1 LB of room softened butter (salted)

• 20-24 cloves of peeled black garlic


Place all ingredients into a food processor and blend


Will last for 3 weeks in the fridge, or 2-3 months in the freezer.


When well mixed, divide into 4 separate logs and wrap separately in parchment paper and place into a sealed container to go into the freezer.  I personally only wrap 3 logs of the black garlic butter to go into the freezer and have a spare container for easy convenient usage in my fridge.


4 heads of black garlic = 24 black garlic cloves

200g of black garlic paste = 24 black garlic cloves


Go ahead and be creative, add in a touch of chives, or parsley, a small drop of honey, or 1/2 tsp of apricot jam...maye even a splash of brandy (highly recommended )


HOW TO USE BLACK GARLIC BUTTER

-add a tsp to your grilled steaks - baked potatoes - mashed potatoes - sautéed mushrooms - your favourite chocolate chip cookie recipe - roasted carrots - any sautéed seafood - beans - butter all your roasted chicken or turkey - mushroom risotto
